Savoury Pork Envelopes


8oz cooked pork

1 onion

1/2 teaspoon sage

salt and pepper

2 cooked potatoes


8 oz Flaky Pastry


Chop or mince the cooked pork meat and mix with the peeled, chopped onion.

Add the sage, seasoning and cooked potatoes, cut into dice.

Moisten with a little stock.

Roll out the pastry to a neat square about 1/4 inch in thickness.

Spread the meat mixture in the centre. Moisten the edges of the pastry and fold the corners up to the centre, envelope fashion.

Place on a baking tray and bake in a hot oven (200°), for 15-20 minutes.

Serve with fried apple rings, and a sauce or gravy.
