Banana Bundt Cake

with Cream Cheese Frosting



How do you make an ordinary Banana Cake into something sensational? Bake it as a Banana Bundt Cake!! This recipe is simply perfect for use with the Fleur De Lis Bundt Cake Tin and I took the opportunity to bake this very special cake in the tin that I have come to know as a true performer. Ingredients:

For the Bundt Cake:

3/4 cup of butter

1 1/2 cups sugar

3 mashed bananas

3 eggs

2 1/4 cups self-raising flour

1 1/2 teaspoons baking soda

3-4 tablespoons milk

For the Cream Cheese Frosting:

2 cups pure icing sugar (not icing mixture)

1 teaspoon vanilla extract

2 tubs Full Fat Cream Cheese

1/2 cup butter

Method:

Preheat oven to 180°C (350°F).

Cream butter and sugar. Add mashed bananas and beat well.

Add beaten eggs, half of the milk, the flour, and the vanilla extract.

Lastly add the remainder of the milk in which the soda has been dissolved.

Bake in a moderate oven for 50 minutes if using the Fleur De Lis Bundt Cake tin (about an hour for any other cake tin) - or until a knife comes out clean when inserted into the middle of the cake.

For the Frosting:

Cream butter and cream cheese together until well blended. Add vanilla extract. Gradually add sifted pure icing sugar until the icing has taken on a thicker substance.
