Apple Nougat Tart


1 pastry case

2 Tablespoons apricot jam

1 cup cooked drained apple

1 cup coconut

1/2 cup sugar

1 egg (separated)

2 tablespoons milk

1/2 teaspoon vanilla


Spread base of pastry shell with apricot jam. Cover with cooked apple.

Mix together coconut, sugar and egg yolk.

Stir in milk and essence.

Beat egg white until stiff, fold into mixture.

Turn on to apple and bake in moderately hot oven for 15 to 20 minutes, or until browned.
