Tuna Patties

Ingredients

425g tin tuna (in brine or springwater), drained
1 onion chopped
1 carrot grated
1 1/2 sticks celery finely chopped
1/2 cup cheese grated
3 small potates chopped, boiled and mashed
1/2 cup breadcrumbs
1 egg
Salt and Pepper to season
1 tablespoon olive oil
Plain flour (to roll patties in)

Method

Boil potatoes, mash and set aside.

In a medium frying pan heat oil to medium heat and lightly cook onions, celery, carrot and set aside.

In a large bowl place tuna, cooked vegetables, mashed potato, lightly beaten egg and breadcrumbs together with salt and pepper to season. Mix together until all ingredients are well combined.

Take a small tablespoon of mixture (optional make them as small or as big as you like them) and roll into patties. Roll each pattie in flour and refrigerate for 15-20 minutes (optional - if time permits) prior to cooking.

Heat oil in large frying pan to a medium heat and fry patties on each side until golden brown.

Serve with a tossed salad and crusty bread.
