Aztec Indian Dinner

My Mum used to cook this when had unexpected visitors, and growing up in a "clergy" household, this happened frequently! Easy to make, and it goes a long way!

500 - 750 grams mincemeat (you can vary this depending on the number of people you are feeding)
1-1 and a 1/2 teaspoons of ground red paprika
1 400gm tin sweetcorn kernels
1 400gm tin tomato soup
1 medium onion - chopped
Salt and Pepper to taste
Cooked rice (long grain white rice usually works best)

First brown the mince and onion together. Sprinkle over the ground paprika and stir well. Then add the sweetcorn and the tomato soup and stir well. Add your salt and pepper to your taste. Leave this to simmer for a while while you cook your rice. If it is looking a little dry, add some beef stock.

To serve, make a "nest" with the rice and pour the meat mixture into the middle.
