Vanilla Fudge


1/2 pint evaporated milk

1 lb granulated sugar

1 1/2 oz butter

A few drops of vanilla essence


Put milk, sugar and butter in a strong pan, heating gently until the sugar dissolves, then bring to the boil.

Boil, stirring gently, and heat to a temperatue of 240°F.

Remove pan from the heat, and add a few drops of vanilla.

Beat thoroughly, until mixture thickens, and then pour it into a greased tin.

When it is cold and firm, cut it into squares with a hot knife.
