Strawberry Muffins


3 cups plain flour

4 medium eggs, beaten

2 1/2 cups of strawberries, hulled and sliced

2 cups sugar

1 1/2 cups chopped walnuts

1 cup vegetable oil

1 tablespoon of cinnamon

1 teaspoon of baking soda

1 teaspoon of salt


Preheat oven to 210°C. Place muffin cases in muffin tray.

In a large bowl, combine the flour, sugar, cinnamon, baking soda and salt.

In a separate bowl, combine the eggs, strawberries and the vegetable oil.

Mix the contents of the two bowls together.

Gently fold in the chopped walnuts.

Fill the muffin cases about two-thirds full and top with a few strawberry slices.

Bake for 15 minutes.

Allow to cool.
