Strawberry Jam


4 lb strawberries

Juice of 4 lemons

3 1/2 lb sugar


Put the prepared fruit into the pan with the lemon juice, and simmer until thoroughly well cooked - about 30-45 minutes.

Add sugar, stir until dissolved, then bring to the boil.

After about 15 minutes, test for setting; when sufficiently cooked, allow to cool, stirring occasionally.

When half cold, pour into pots, cover immediately with waxed circles, and tie down when cold.
