Spiced Pork In Peanut Sauce
1 1/2 kg boneless pork
1/4 cup olive oil
5 onions, chopped
2 cloves garlic, crushed
3 tablespoons uncooked rice
6 tomatoes, chopped
2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon saffron
1/2 teaspoon cinnamon
1 1/2 cups beef stock
4 potatoes, peeled and quartered
1/2 cup ground peanuts
1/2 cup cream
2 green bananas, peeled and quartered
Cut the meat into 1 1/2 cm cubes.
Heat the oil in a large saucepan. Saute the onions and garlic for five minutes.
Add the pork and rice and cook over a high heat until the meat is browned.
Mix in the tomatoes, salt, pepper, saffron, cinnamon, clove and stock.
Cover and cook over a low heat for 1/2 hour.
Add the potatoes and cook for 20 minutes.
Stir in the peanuts, cream and bananas and cook for another 15 minutes or until the meat and the potatoes are tender.
