Pumpkin Scones


These Pumpkin Scones are simply delicious - fantastic served with cottage cheese and chives, or ricotta, or just a bit of butter.

1 Tablespoon butter

1/4 cup sugar

3/4 cup cold mashed dry pumpkin

1 egg


2 cups self-raising flour

3/4 cups milk


Cream butter and sugar.

Add egg beaten well, then pumpkin.

Lastly, sifted flour, salt and milk.

Cut through with a KNIFE to mix the ingredients thoroughly.

Put on floured board and press out to about 3/4 inch thick.

Cut with scone cutter.

Bake in a hot oven for about 15 minutes.
