Pork with Orange Casserole

This Pork With Orange Casserole recipe is a perfect combination of flavours - and casseroled to ensure the pork reaches maximum tenderness.

Adults and children alike will enjoy this meal - best served on a bed of steamed rice. This recipe contains nuts (optional). The alcohol is there to add flavour, but note that the alcoholic content itself is cooked "out".

6 pork chops, cut 2cm thick

2 teaspoons salt

1/2 teaspoon pepper

1 kg sweet potatoes, cooked and peeled

1/2 cup firmly packed brown sugar

1/4 cup butter or margarine, melted

2 oranges, peeled and diced

3 tablespoons rum

1/2 cup chopped nuts

Method:

Season the chops with 1 1/2 teaspoons salt and the pepper. Brown chops on both sides in a frypan.

Drain and arrange in a casserole dish.

Mash the sweet potatoes and mix in 1/4 cup of brown sugar, half the butter, the remaining salt and the rum. Fold in the oranges and spread over the chops.

Mix together the nuts and the remaining brown sugar and butter. Sprinkle over the top.

Bake in a 190°C oven for 30 minutes.
