Patty Cakes

Ingredients:
These patty cakes (also known as fairy cakes, cup cakes amongst many other names) are the old-school recipe - true blue aussie, tried and tested - in my own kitchen.
1 cup self-raising flour
1 Tablespoon cornflour
1/4 cup sugar
1/2 Teaspoon Baking Soda
2 level Tablespoons butter
2 eggs
1 Teaspoon Cream of Tartar

Method:
Beat butter and sugar to a cream, add eggs one at a time and beat.
Add self-raising flour and cornflour (mixed together), 2 Tablespoons at a time, beating well in between additions.
Add Cream of Tartar and Baking Soda last, and beat them through the mixture.
Bake in a quick oven (that is, a hot oven) for about 10 minutes or until the centres bounce back when touched.
