Passion And Apple Delight Tart


First Layer:

2 cups of stewed apples

2 tablespoon sugar

1/2 cup water

2 passionfruit

Second Layer:

1/2 tin condensed milk

Juice of 1 lemon

1 egg yolk

2 oz cream cheese

Third Layer:

1 dessertspoon gelatine

Apple syrup from first layer (made up to3/4 cup with water)

1 egg white

1 teaspoon lemon juice

rose pink colouring

whipped cream


First Layer:

Place apples, sugar and water in saucepan. Bring to boil, remove and strain syrup from pulp.

Add passionfruit to pulp.

Cool and place in pastry case.

Second Layer:

Combine all ingredients. Beat until thick.

spread over apple mixture.

Third Layer:

Dissolve gelatine in hot apple syrup, add lemon juice. Place in refrigerator until partly set.

Add pinch salt to egg white and beat at high speed until stiff.

Colour pale pink, add partly set apple juice, while still beating, until thick.

Pour on pie and decorate with whipped cream.
