Orange Apricot Surprise Muffins


1/2 cup Apricot Jam

60g butter, melted

1 teaspoon vanilla essence

1 egg, beaten

1/2 cup milk

1 orange, juiced and zested

1 teaspoon mixed spice

1/2 cup sugar

2 cups self raising flour


Preheat oven to 200°C and either grease muffin tray, or place muffin cases in tray.

Combine flour, sugar, mixed spice and orange zest in one bowl.

In another bowl, combine egg, juice, vanilla essence and milk.

Melted butter in a cup, and set aside.

Pour the contents of the wet ingredients into the dry ingredients, then add the melted butter.

Mix the mixture lightly and quickly,then half fill muffin cases with the mixture.

Dig a shallow hole in the mix in each muffin case - and add a teaspoon of Apricot Jam.

Fill each muffin case with the rest of the muffin mixture and bake at 200°C for 20 minutes or until cooked.
