Heavenly Tart
Ingredients:
1 pastry case
1 cup of boiling water
1/2 cup sugar
juice 2 lemons or oranges
1 large tablespoon arrowroot
1 cup of boiled milk
1 tablespoon cornflour
3 dessertspoon icing sugar
1 dessertspoon butter

Method:
For Jelly layer:
Put boiling water, 1/2 cup sugar, juice 2 lemons or oranges in saucepan and bring to boil; Thicken with a large tablespoon arrowroot. Colour pink. When cool spread on pastry.
For Cream layer:
1 cup milk thickened with 1 tablespoon cornflour. When quite cool beat in 3 dessertspoons icing sugar and 1 dessertspoon butter. Spread on top of jelly and cover with toasted coconut.
