Ginger Fluff Layer Cake


4 eggs

3/4 cup caster sugar

1 dessertspoon golden syrup

1/2 cup cornflour

2 dessertspoon plain flour

1/2 teaspoon cream of tartar

1/4 teaspoon bicarbonate soda

1 teaspoon each cinnamon, powdered ginger and cocoa


Separate eggs and beat whites until thick. Add yolks and beat through. Add sugar and golden syrup and beat until thick and creamy.

Fold in sifted cornflour and spices.

Lastly add sifted plain flour, bicarbonate soda and cream of tartar.

Pour into greased 8" sandwich tins.

Bake in a moderate oven for 20-25 minutes.

When cooked, turn out onto wire rack and allow to cool before joining with Mock Cream.

Mock Cream:

Cream together 2 tablespoons of caster sugar, 2 tablespoons butter. Add 2 tablespoons boiling water and two tablespoons of milk. Add 1 teaspoon of vanilla essence and blend the ingredients together until smooth.
