French Onion Soup


3 good sized brown onions

2 oz butter or margarine

1 1/2 pints stock

salt and pepper

white bread, cut into neat squares

grated cheese


Peel the onions and slice them very thinly, using a knife with a serrated edge.

Put them in a pan with the fat and cook over a gentle heat until they are yellow.

Add the stock and seasoning and simmer for about 20-30 minutes, until the onions are quite soft.

Add the cubes of bread which have been liberally sprinkled with grated cheese, and serve at once.
