Cream Cheese And Banana Bread


100g castor sugar

175g cream cheese

25g butter or margarine

225 mashed bananas

2 eggs, beaten

225g self-raising flour



Grease and line the base of a large loaf tin.

Cream together the sugar, cream cheese and butter or margarine until light and fluffy.

Mix in the mashed bananas and the beaten eggs.

Stir in the flour, then add sufficient milk to give a moist dropping consistency.

Spoon the mixture into the prepared loaf tin.

Bake in the centre of a moderate oven (180°C) for about an hour until firm and well risen.

Turn out onto a wire rack to cool.
