You might remember this sweet from a school fete 30 years ago, or perhaps you have a family member who still cooks it the traditional aussie way...give it a go - it's divine.
1 lb sugar (preferably loaf)
1/4 pint milk
5 oz desiccated coconut
Dissolve the sugar in the milk, then boil it for about 10 minutes, or until a temperature of 240°F is reached.
Remove the pan from the heat and stir in the coconut.
Pour half the mixture into an oiled tin.
Colour the remainder and pour this quickly on to the first half.
Mark into bars when half set, and break up when cold.
