Chocolate Biscuits


Chocolate Biscuits are simply divine on their own, but I love to use them crushed up as my Blackforest Cheesecake Base.

6 oz flour

1 oz cocoa

3 1/2 oz margarine

4 oz caster sugar

1 egg yolk

1 few drops of vanilla essence

icing sugar


Sieve the flour and cocoa and rub in fat.

Add the sugar and mix well, then mix to a stiff dough with the beaten egg and essence.

Turn it on to a floured board, roll thinly and cut into fancy shapes.

Bake on a greased tray in a moderately hot oven (205°C) for 10-15 minutes.

When cold, sprinkle with icing sugar if desired.
