Chicken With Basil And Broccoli


1 tablespoon oil

2 cloves garlic, chopped

500g chicken thigh fillets, sliced

1 red chilli, seeded and sliced

1 tablespoon fish sauce

2 teaspoon oyster sauce

1/4 cup water

2 teaspoon brown sugar

250g broccoli, broken into floreats

20 fresh basil leaves


Heat oil in wok or frying pan, add garlic and fry for 30 seconds.

Add chicken and chilli and fry until chicken is golden brown.

Stir in fish sauce, oyster sauce, water, brown sugar and broccoli - and stir-fry for 2 minutes.

Add basil and toss through.

Serve with steamed long grain rice (I like Basmati rice).
