 Chicken With Black Olives
 Ingredients:
 
 1.25kg chicken pieces
 1/4 cup bacon, chopped
 1 tablespoon flour
 1 onion, chopped
 125g mushrooms, chopped
 1 green capsicum (pepper), chopped
 1/2 cup tomato paste
 10 black olives, pitted and chopped (more if desired)
 1 cup chicken stock
 1 teaspoon salt
 1/4 teaspoon pepper
 1 clove garlic, minced
 
 
 Method:Cut the chicken into pieces and coat with flour.
 Fry bacon until it is brown, then add chicken and brown.
 Remove chicken and bacon to a casserole dish, then fry onion, mushrooms, garlic and green capsicum for 5 minutes.
 Add tomato paste, olives and stock.
 Stir until mixture boils then pour into casserole, spreading evenly over the chicken and bacon.
 Add seasonings and cover.
 Bake in a slow oven 160°C for 2 hours.
