Chicken And Cashews
2 chicken breasts
315g bamboo shoots
1/3 cup soy sauce
1/2 teaspoon salt
1/4 cup peanut oil
155g snow peas
4 spring onions (shallots, scallion)
1/2 - 1 red capsicum (pepper)
3/4 cup chicken stock
2 tablespoons cornflour
1/2 teaspoon sugar
185g cashew nuts
Bone chicken, remove skin, and sluice flesh thinly.
Remove tips and strings from snow peas, and chop in large pieces.
Slice mushrooms and chop onions and capsicum.
Combine soy sauce, sugar, cornflour and salt.
Heat 1 tablespoon of oil and add nuts. Cook for 1 minute, shaking pan from time to time, remove and drain.
Add chicken to pan and cook for 3 minutes then add peas and mushrooms.
Pour in stock and simmer for 3 minutes.
Add bamboo shoots and stir in soy sauce mixture.
Cook until thickened, stirring, add nuts and serve immediately.
