Zucchini Pickles


Zucchini Picles are a great accompaniment to BBQ meat, salads or in sandwiches.

500g zucchini, finely sliced

2 Tablespoons salt

1/2 cup white vinegar

1 Teaspoon tumeric

500g onion, finely sliced

1/2 cup sugar

1 Tablespoon mustard seeds


Sprinkle zucchini and onion with salt, leave for 2 hours.

Rinse and drain well. Combine sugar, vinegar, mustard seeds and tumeric.

Stir over low heat until sugar is dissolved, then bring to boil and simmer 5 minutes.

Add vegetables, simmer 5 further minutes.

Bottle, cool and seal.
