Coconut Bread (Indian)

Ingredients:



The wonderful Indian woman who babysat my now 23 year old son gave me this recipe - as my son absolutely loved it. It is traditionally eaten with Indian curry, and is absolutely delicious.

25g desiccated coconut

1/4 teaspoon salt

50g white plain flour

pinch of cayenne pepper

1/2 teaspoon castor sugar

2 tablespoons water

50g fat for frying

Method:

Place the coconut, salt, flour, pepper and the sugar in a bowl. Work in about 2 tablespoons water to mix the ingredients to a fairly firm dough.

Divide into 6 small pieces and roll each out to a round about 3 inches in diameter. Heat the fat in a large frying pan, and fry the coconut cakes gently until they are light brown on both sides.

Serve as soon as they are cooked.
