Beef And Beer Casserole
One of the best ways to warm up in winter, is with a good hearty beef casserole - try this one, you won't be disappointed.
750g chuck steak
salt and pepper
2 tablespoons oil
3 rashers bacon
1/4 cup flour
1 1/4 cups beer
1 1/4 cups beef stock
500g onions, sliced
1 1/4 tablespoons sugar
1 bouquet garni
3 tablespoons vinegar
Cut the meat into bite-size pieces, season with salt and pepper and brown in the hot oil.
Add the chopped bacon and cook for five minutes. Remove the meat and bacon and gradually stir in the flour. Brown over a low heat. Gradually add beer and stock, stirring constantly.
Place the meat, bacon, sliced onions and garlic in a casserole dish. Sprinkle with sugar. Pour the sauce over and add the bouquet garni.
Bake covered in a 150°C oven for 3 1/2 - 4 hours. Before serving remove the bouquet garni and stir in the vinegar.
