White Chocolate Mud Cake

This White Chocolate Mud Cake recipe is contributed from a dear friend who has improved on this recipe many times over - with the result that this IS the BEST recipe for this cake that I have seen.

The Cake is perfect to offer as morning or afternoon tea, but moreover, this is PERFECT as a Wedding Cake, or even a Wedding Reception dessert.

In fact, I have made this cake as a Wedding Cake on several occasions - and on each occasion, the bride decided to cut the bottom layers for dessert at the wedding. The top layer was iced polystyrene, and therefore able to be kept.

For the Cake:

200g White Chocolate Melts

250g butter

200ml hot water

1 1/2 cups castor sugar

1 3/4 cups plain flour

1 cup self-raising flour

2 eggs, lightly beaten

1 teaspoon vanilla essence

For the Frosting:

100g White Chocolate Melts

1/4 cup cream

250g cream cheese, softened

1/4 cup lemon butter.

Method:

Preheat oven to 180°C.

Grease and line the base of a 22cm round cake pan.

Place the White Chocolate Melts, butter, water and sugar into a medium saucepan.

Stir constantly over a medium heat for 2-3 minutes until the butter has melted and sugar has dissolved.

Allow to cool slightly.

Sift flours together into a large mixing bowl. Add cooled chocolate mixture, eggs and vanilla. Mix until well combined and batter is smooth.

Pour cake batter into prepared pan. Bake for approximately 1-1 1/4 hours or until cooked through in the centre and golden on top.

Allow cake to cool in pan for 20 minutes before turning out onto a wire rack to cool completely.

Frosting:

Place White Chocolate Melts and cream into a small saucepan. Stir constantly over a medium heat for 2-3 minutes until the butter has melted and sugar has dissolved.

Allow to cool slightly.

Beat cream cheese in a medium mixing bowl with an electric beater until light.

Add chocolate cream mixture and continue beating until smooth.

Cool until mixture is thick enough to spread over cake.

Drop spoonfuls of lemon butter onto the frosting and swirl mixtures together with a flat bladed knife.
