Pork Capricorn

Ingredients:



Pork Capricorn is a deliciously refreshing tropical-style pork dish, with a "Hawaiian" aspect.

500g pork fillet

1 Green pepper, seeded, sliced

1 carrot, cut in thin strips

1 1/2 cups chicken stock

1/4 cup white vinegar

1/2 cup raisins

salt, pepper

2 Tablespoons oil

1 red pepper, seeded, sliced

1 medium onion, chopped

3/4 cup pineapple pieces

1/4 cup brown sugar

3 Tablespoons soy sauce

3 Tablespoons cornflour, blended with water

Method:

Cut pork in 2cm cubes, fry until browned.

Drain excess fat.

To pork, add sliced peppers, onion, carrot, vinegar, sugar and stock.

Bring to boil, then simmer 30-35 minutes.

Lastly, add soy sauce, raisins and pineapple.

Thicken with cornflour mixture.

Simmer for 3 minutes, season to taste.

Serve with rice.
