Orange Fudges

Ingredients:



1 1/4 lb granulated sugar

1/3 pint evaporated milk

2 oz butter

2 teaspoons grated orange rind

2 tablespoons orange juice

Method:

Place the sugar and the milk into a thick pan over a moderate heat and stir occasionally until the sugar is fully dissolved.

Add thebutter, orange rind and juice, and stir gently while bringing the mixture to a temperature of 115°C.

Remove from the heat, beat until it is the consistency of thick cream, and pour it into an oiled tray.

When it is nearly cold, cut it into squares.
