Mocha Cashew Fudge


12 cups icing sugar

1/2 cup milk powder

1/3 cup cocoa

1 level Dessertspoon coffee

2 egg whites

4 ozs copha

1 cup toasted coconut

Small packet glazed cherries

Small packet cashew nuts, washed and dried

pinch salt


Put the following into a bowl: icing sugar, powdered milk, cocoa, coffee, salt.

Add coconut and beaten egg whites.

Melt copha, when just warm add to mixture.

Mix all ingredients well, and press into alfoil lined dish to thickness desired.

Press cherries and nuts into the mixture.

Keep in fridge.

Cut into squares - will keep indefinitely.
