Continental Salad Sticks
4 Lebanese cucumbers
250g punnet cherry tomatoes
1 green capsicum (pepper)
24 pitted black olives
Slice cucumbers, cut capsicums into squares.
Combine vegetables in a bowl.
Combine dressing ingredients (see below for dressing ingredients) in a screwtop jar, shake well, add to vegetables.
Stand for at least 1 hour.
Thread vegetables onto toothpicks or short skewers. Makes 24.

2 Tablespoons lemon juice
