Chocolate Marble Cake

Ingredients:



This beautiful Chocolate Marble Cake will make your children's gasp in delight asking how you did it (hold on to the secrets).

Demonstrating once again, the winning combination of Vanilla and Chocolate, this cake will quickly become one of those that you use to show off your baking skills.

125g butter

3/4 cup castor sugar

2 teaspoons grated lemon rind

1 teaspoon vanilla

2 eggs

1/2 cup milk

1/4 cup brown sugar - lightly packed

2 cups self-raising flour

1 tablespoon cocoa

1 tablespoon sweet sherry

Method:

Place milk and brown sugar into saucepan, stir over low heat until sugar dissolves.

Remove from heat, allow to become cold.

Cream butter, castor sugar, lemon rind and vanilla until light and fluffy.

Add eggs one at a time, beating well after each addition.

Fold in sifted flour and milk mixture alternately.

Place half of the cake mixture in another bowl.

Add sifted cocoa and sherry to one bowl, mix lightly.

Leave other half of cake mixture plan.

Spread half of the plain cake mixture into greased and lined deep 20cm cake tin.

Spread over half the chocolate mixture, then repeat with plain and chocolate layers.

Using a skewer, gently swirl through the mixture to create the "marble" effect (don't over do it, or the cake will just blend completely).

Bake in a moderate oven for 44 to 60 minutes.

When quite cold, top with drizzled chocolate glaze icing.
